I have a friend living on a small farm on the Upper Plain over in the Wairarapa. He grows Walnuts and has a scoop to collect the nuts after they drop. He then has a small machine to crack the nuts and to sort the kernels from the shell.

We now have a lovely Wilsons walnut we planted 7 years ago when we arrived – getting lovely walnuts now – will bring you some next visit – or come up and stay with us for a few nights uncle Geoff!! We always dried them in their shells first, and stored though the year in hessian bags. They were cracked and jars refilled as required by the cook. Different ways of achieving the same ends, I suppose. I wonder if they keep better dried in the shell, or cracked, dried and stored in airtight containers?
